SPRING PEA PASTA

Looking for something quick, refreshing and even kid approved? Whip up this delicious gluten free pasta dish in under 20 minutes. Perfect for those busy weeknight meals!

Ingredients:

1 box of chick pea pasta

4 scallions, thinly sliced

1 cup peas

2 handfuls of baby spinach, chopped

1 tbsp dill, chopped

feta (or vegan feta if you're dairy free)


For the dressing:

1/3 cup Extra Virgin Olive Oil

1/4 cup lemon juice

2 tsp lemon zest

2 garlic cloves, minced

1 tbsp basil, chopped

salt + pepper to taste


Directions:

  1. Cook the pasta according to package.

  2. Drain and rinse the pasta. Transfer to a bowl. Add in the dressing and peas.

  3. Add in the remaining ingredients. Combine and season with salt, pepper and parsley to taste.

  4. Serve immediately and enjoy!
