1 box of chick pea pasta

4 scallions, thinly sliced

1 cup peas

2 handfuls of baby spinach, chopped

1 tbsp dill, chopped

feta (or vegan feta if you're dairy free)

For the dressing:

1/3 cup Extra Virgin Olive Oil

1/4 cup lemon juice

2 tsp lemon zest

2 garlic cloves, minced

1 tbsp basil, chopped

salt + pepper to taste


  1. Cook the pasta according to package.

  2. Drain and rinse the pasta. Transfer to a bowl. Add in the dressing and peas.

  3. Add in the remaining ingredients. Combine and season with salt, pepper and parsley to taste.

  4. Serve immediately and enjoy!
